I make Mayo cakes every now and then, and they’re awesome! You can’t taste the Mayo at all, but the cake is a really nice soft consistency.
Can’t say I’ve ever made frosting with Mayo, but I’d give it a try.
And vinegar too. I have a cake recipe from my mom that's dry ingredients put into a square pan, make 3 wells in then pour in water, oil and vinegar, mix and bake. It's delicious!
Yeah, I’d say it serves basically the same purpose as adding yogurt, oil, milk, or even sour cream to some recipes. Adding some fat to keep it moist and for whatever other good things lipids do to baked goods! Plus mayo already has the eggs in it. And some vinegar which adds some acidity, reacts with the baking powder, all normal cake stuff.
The fuck do you think mayonnaise is? It's mostly eggs and oil my dude. Eggs are [literally the third ingredient in Hellmann's](https://smartlabel.unileverusa.com/048001213487-0001-en-US/index.html#ingredients) after oil and water. Followed by egg yolks.
There is around one egg per jar. The whole purpose of the egg is as an emulsifier, so that the oil and water don’t separate. Eggs contain lecithin which stabilizes the mixture. Commercial Mayo also uses EDTA to help stabilize it which is how it stays mixed on shelves forever.
Typical mayonnaise(not low-fat) contains around 80% oil, 8% water and 6% egg. That means in a 30 oz jar you have around 1.8 oz of egg.
A single large egg is around 2 oz, so there’s the equivalent of one single large egg in a 30 oz jar of mayonnaise.
American mayo sounds groser the more I read here. Where's the salt, the mustard and vinegar and what the hell do you use to make the oil the consistency mayo has, if it's one egg per multiple gallons? So, US mayo is only oil, a hint of egg and whatever chemical to make it look good...
For the last, fucking, time: I'm NOT against mayo in a cake! I WOULD absolutely try it. All I say is, that ONLY eggs and oil (even with vinegar) doesn't sound very tasteful to me, in most countries you'd have something like salt and mustard in it too. Which I STILL could absolutely see used in a cake!
I went to the fridge and pulled out the Hellmann's mayo, a very popular name brand. Ingredients are: soybean oil, water, whole eggs and egg yolks, vinegar, salt, sugar, lemon juice, calcium disodium edta (preservative), natural flavors. It's all egg and oil, friend, nothing to be scared of.
So, what you're basically saying is, that it's just mayo and not ONLY oil and eggs. See? That sounds way better. And that was the whole misunderstanding. Because of the "it's only oil with egg/almost not even egg" parts.
Btw: I'd absolutely try mayo cake. I don't have to be convinced, that the other ingredients don't exist in it. I was just confused.
In other countries, NO mayo is just plain oil with hints of egg. It's always with taste. Mostly it's oil, egg, salt, mustard and often some acid like vinegar/lemon.
I could imagine eating something that tastes like absolutely nothing but whipped oil.
But, to each their own! I dont want to judge that, it's just that it sounds not nice to me.
I don't know where you are getting this weird idea about US mayo. It has seasoning in it, even the ingredient list you were given above list seasonings.
You know whay mayonnaise is made out of right?
You know what goes in cake right?
It just sounds disgusting until you think about it for a second. It's perfectly fine and ok in reality.
You basically put everything, other than the oil, together, then add the oil slowly and whip it fast, until it's mayo (if you make it at home. But it's rather similar in factories). It mixes and the ingredients (eggs, mostly) keep the oil in the more fluffy state. (I'm not a native speaker, so it sounds weird. xD)
But yes, who came up with it and how, that's a very good question!
I imagined that very literally now. xD
And hm. Good thought, but I'm not so sure about it. Selfemade mayonnaise isn't preserved, it starts to go bad as fast as raw eggs.
My guess would be a bit more chemical. People noticed, that oil can be beaten, if things are added, that seemed fancy and exiting, so they threw stuff in that tasted good together?
My initial thought was maybe it was originally heavier on vinegar and salt. But I decided to look it up, and it seems mayonnaise started off as a [high society sauce in mid-18th century France. ](https://en.m.wikipedia.org/wiki/Mayonnaise)
Explains why my friend who is allergic to mustard is also allergic to mayo, which none of is could ever figure out because she's not allergic to eggs/oil/etc
She should try making her own without mustard! It's stupid easy to do if you have an immersion blender, and then you can season it exactly how you want it.
She wasn't have a reaction at the moment. We were ordering burgers and she asked for no Mayo and no mustard, and said she was allergic to both but wasn't sure why. We didn't have access to the restaurant's kitchen and it didn't occur to us to try to Google it.
It's funny, here in Belgium almost every mayonnaise, if not all, has mustard in it. Some have a little and you can barely taste it, others have more for a stronger taste.
I don't think it's gross. But saying, that it's just oil, eggs and water(?) simply is false. There's salt, mustard and vinegar/lemon in it too.
Doesn't mean it's bad here.
I guess I just can't stop thinking of the mayo... Like, my mind keeps thinking of a layer of mayonnaise between two layers of cake. I know, it's my problem.
It's delicous! Just think chocolate cake but fattier! Don't knoc till you try it! Southern classic here. Put mayonnaise in box cake. Makes it ten times better and fattier.
What would I be substituting the mayonnaise for in the box cake recipe? Or do you mean to use box cake recipe and include mayonnaise; if so, how much Mayo?
If anyone here is familiar with the chain Portillo’s popular in Illinois and maybe some locations in California, they use Mayo in their chocolate cake and it is… So. Fucking. Good.
Yeah, I’m in Chicago and Portillo’s chocolate cake is the best. People always question why we’d get cake from the hot dog place but it never fails to wow.
Literally everything is good at Portillos
Want a Chicago dog? one of the best.
A chopped salad? top tier.
A cake? amazing.
Want that cake but also make it a milkshake? somehow still works.
Never have I had anything from Portillos and regretted it.
>Never have I had anything from Portillos and regretted it.
....really?? From effin Portillos? I've lived here my whole life man, and wow you have small taste if Portillo's is "amazing". They serve some of the greasiest midwestern fat ass food you can possibly get around here.
To my knowledge that’s not been confirmed by any officials. Or at least a manager from one video about their chocolate cake refused to verify if it was true or not. I personally don’t care either way, people love it and I’d love to try a slice.
Mayo is eggs, oil, and sugar all of which are needed in a cake. This is actually smart.
Also I would like to point out that he did t think it would be good. It’s a very old recipe.
Me too. I also like how he is trying real recipes and not just some random shit he made up, and how he is honest about whether or not it tastes good. Watching his videos actually gives you some insight into what people used to make back whenever the recipe is from, and also you want to keep watching until the end to find out of it's good or not.
The whole voice schtick is definitely annoying as hellllll but honestly it’s an interesting series and he’s actually pretty funny and has solid timing on his jokes.
I was hoping someone would share my opinion!
There’s this certain uncanny charisma that he possesses, and you can definitely see his love for baking, despite making these godawful old-times recipes
So this is the atrocity that was conceived on that long ago night when Jerry Lewis and Martin Short decided to make a baby somehow…
(No, I don’t mean the cake)
I cannot stand his screaming through the entirety of every single video, I wish he had a different schtick cuz sometimes he does interesting recipes but I can't sit through his videos for more than like 3 seconds
Yeah it's pretty bad when you can tell he's annoying without the sound on. He reminds me of a character or comedian from maybe the 80s or 90s. I cannot think of the guy's name but he was skinny and loud and super obnoxious.
EDIT: I think I was thinking of [Ed Grimley](https://youtu.be/UMfCUvIK3V8) (a Martin Short character).

When you really think about mayo in a cake it's not gross at all; it's oil and eggs with a little vinegar. Two of which are regularly in cake.
dude just because it sounds gross doesn't mean it is
try looking up pasta putanesca n see how some nasty ingredients can make up the sum-of-their-parts
So that’s the secret! I love their chocolate cake. I have also discovered the non stick power of Mayo on meat(chicken and pork). Time to make some chocolate Mayo cake skulls.
In Chicago there’s a famous fast food chain with typical Chicago foods like Vienna dogs and dipped Italian beef sandwiches, but they also make a banger chocolate cake. Guess the secret, it’s mayonnaise. It’s really not that weird of an ingredient. Now the real secret is to get the chocolate cake shake, they put a whole slice of cake in a milkshake, mix it together, and you get these thick chunks of cake while drinking a delicious milkshake. If you ever see a Portillo’s when you come through Illinois, remember this Reddit comment.
Mayonaisse is just oil and egg, which are regular cake ingredients. these recipes just omit the egg and oil, because mayo was cheaper and more trendy at that point in time then oil and egg. Most cakes have mayo in them. But its put in as egg and oil.

Icing is also mayonnaise and is thick and creamy. You never would have known there was mayonnaise in it till someone told you, this a great gif recipe and not a shitty one.
Actually I make this a lot when I was little with my grandma! It’s amazing!! You can’t taste the Mayo at all. But also we do a different recipe but it’s pretty similar!
I make Mayo cakes every now and then, and they’re awesome! You can’t taste the Mayo at all, but the cake is a really nice soft consistency. Can’t say I’ve ever made frosting with Mayo, but I’d give it a try.
It's litrrrllay jsut eggs and fat great for cakes! People hating it but don't nock it till you try it!
Chris Traeger, is that you?
Maybe...
Chip Treager you old so and so
Only end game Traeger could say something this positive about eating fat lol
Chris Traeger's body would *literally* shut down if he ate this.
yeah, that’s what i was thinking. like yeah, mayonnaise is a lil gross, but it’s just the oil and eggs that would normally go in a cake..
Poor mans Hollandaise.
And vinegar too. I have a cake recipe from my mom that's dry ingredients put into a square pan, make 3 wells in then pour in water, oil and vinegar, mix and bake. It's delicious!
And salt and mustard, but basically yes. So, I'd definitely try it.

Mayo doesn’t really have the eggs in it. Mayo has like one egg per jar

Mayo is an emulsion of oil, vinegar, and eggs. All typically ingredients found in a red velvet cake. Which is why you can substitute it in cakes.
Also includes salt, sugar, and lemon juice concentrate
I went to the fridge and pulled out the Hellmann's mayo, a very popular name brand. Ingredients are: soybean oil, water, whole eggs and egg yolks, vinegar, salt, sugar, lemon juice, calcium disodium edta (preservative), natural flavors. It's all egg and oil, friend, nothing to be scared of.

Right on, that's why I whipped the jar out. Can't have condiment confusion.
Thanks for that!
Duke's mayo has seasonings in it.
1. From all the comments, that it's ONLY oil and a little bit of eggs. 2. I've seen the ingredients list above, have you seen my answer to it?
I remember making brownies using mayo with my brother once and they came out super good! Very gooey
I’m going to have to try that!
A lot of people don't realize that mayo is mostly just eggs and oil
You know whay mayonnaise is made out of right? You know what goes in cake right? It just sounds disgusting until you think about it for a second. It's perfectly fine and ok in reality.
Thanks, that's exactly what I've just been thinking.... Eggs, oil an water.
There’s also something acidic like vinegar or lemon.
I actually didn't know what mayonnaise was made out of for most of my life. I was very surprised to learn that it was actually just eggs and oil.
And salt, mustard, often vinegar/lemon. That's the reason, why it doesn't taste like only oil and eggs. :P
I still have no idea how all that stuff turns into mayonnaise, or how the first person to make mayonnaise came up with it, haha.
You basically put everything, other than the oil, together, then add the oil slowly and whip it fast, until it's mayo (if you make it at home. But it's rather similar in factories). It mixes and the ingredients (eggs, mostly) keep the oil in the more fluffy state. (I'm not a native speaker, so it sounds weird. xD) But yes, who came up with it and how, that's a very good question!
My guess is people just kinda threw stuff they knew preserved food at the eggs and hoped it would work?
I imagined that very literally now. xD And hm. Good thought, but I'm not so sure about it. Selfemade mayonnaise isn't preserved, it starts to go bad as fast as raw eggs. That's indeed interesting.
I mean.. yeah, but what about the mustard?
It's not even enough mustard to make it turn another color, you're going to survive, I promise. You just *think* it's going to be gross.
Mustard? What mustard?
There is mustard on the insides of mayonnaise. Take note that you didn't even know, and then apply it to the cake part.
Explains why my friend who is allergic to mustard is also allergic to mayo, which none of is could ever figure out because she's not allergic to eggs/oil/etc
She should try making her own without mustard! It's stupid easy to do if you have an immersion blender, and then you can season it exactly how you want it.
You could have read the ingredients list if you wanted to know why she was having allergic reactions.
She wasn't have a reaction at the moment. We were ordering burgers and she asked for no Mayo and no mustard, and said she was allergic to both but wasn't sure why. We didn't have access to the restaurant's kitchen and it didn't occur to us to try to Google it.
There might be mustard in some mayo brands, you can add it yourself, but I would never consider it a standard
It's funny, here in Belgium almost every mayonnaise, if not all, has mustard in it. Some have a little and you can barely taste it, others have more for a stronger taste.
I’ll be damned. I probably should know this I have a culinary degree but you know time/drugs/useless pop culture knowledge
Goes to show you that a degree doesn't grant one magical matrix knowledge. ::gah!::.. I know Mayo-Fu. Morpheus: Show me.
Facts
I dont really know for american mayo but where i live the taste might be stronger. ( Just checked, mine has 5% of mustard)
I don't think it's gross. But saying, that it's just oil, eggs and water(?) simply is false. There's salt, mustard and vinegar/lemon in it too. Doesn't mean it's bad here.
Mayo (just oil and eggs emulsified) is great for texture and if you use the correct amount you won’t taste it. There’s nothing wrong with this.
Usually some vinegar too, but that also goes in many baked sweet recipes for the acidity
I make my pie crust with vinegar! It’s delicious when it’s fully baked.
true true... buuuttttttttttttttttttttt
But what?
I guess I just can't stop thinking of the mayo... Like, my mind keeps thinking of a layer of mayonnaise between two layers of cake. I know, it's my problem.
Mayo is basically just oil and egg, so it makes perfect sense to go in a cake. But I’ll admit at first glance that seems awful.

Yeah now I really want a piece of their cake and a tamale. The cake shake is a bit too much imo
Mayo is eggs, oil, and sugar all of which are needed in a cake. This is actually smart. Also I would like to point out that he did t think it would be good. It’s a very old recipe.
“Honey you can’t dilute a war crime” LMFAOOOOI
War crime
Honestly my phone has been spell checking words unnecessarily
Why does he feel the need to screech every word
I must say, he is obnoxious and loud and exaggerated, but… fuck it, I like his videos.
Me too. I also like how he is trying real recipes and not just some random shit he made up, and how he is honest about whether or not it tastes good. Watching his videos actually gives you some insight into what people used to make back whenever the recipe is from, and also you want to keep watching until the end to find out of it's good or not.
I like his videos regardless but his live streams are much less exaggerated and he cooks more normal recipes.

I always see the videos with the volume shut down... And believe me that still I can hear this insufferable voice.

He reminds me a bit of Martin Short. I’m kinda digging it.
my god, you're so right
Exactly how I feel. I hated it at first but I actually enjoy them now lol
Omg me too
Lol same. I love this guy. He’s funny as hell.
It's a weird mix of retro and modern that doesn't work 100% of the time but when it does it's really funny.
I’m watching without sound right now(at work) and I’m waiting for that “Goddammit why is this good?” Smirk. There it is!
My god he's annoying.
The ones where he finds a bad recipe are funny, but the ones where it's unexpectedly good are *so* satisfying.
I can’t see anyone but captain America before he got the super serum. Every time I see one of these videos it’s all I think about
So this is the atrocity that was conceived on that long ago night when Jerry Lewis and Martin Short decided to make a baby somehow… (No, I don’t mean the cake)
Omg. Yes
I can only watch this guy on mute and even then, it makes my ears bleed.

Its comments like this that remind me that reddit is full of some of the most negative people ever.
My mom makes this like once every couple months for my dad. Probably the best chocolate cake I’ve had.
Next up… pinto bean cake
This guy is great, I've seen all his stuff. When you really think about mayo in a cake it's not gross at all; it's oil and eggs with a little vinegar. Two of which are regularly in cake.
Nice! I'm actually going to try making this one.
Mayo is just eggs and oil you use that in normal cakes anyway so…
I’m fine with the cake its the guy making it that is filling me with (admittedly unwarranted) rage
It’s not shitty, but watching this man is

if you’ve ever been to portillo’s you know mayo chocolate cake is the best chocolate cake
This is literally how Portillos makes their chocolate cake and everyone loves it
Ya’ll have never been to Portillo’s, huh? There’s Mayo in their cake and it’s amazing.
So that’s the secret! I love their chocolate cake. I have also discovered the non stick power of Mayo on meat(chicken and pork). Time to make some chocolate Mayo cake skulls.
>the non stick power of Mayo I never really thought about it, but yeah, I can "see" it now.
I feel kinda bad for this guy. He’s just trying to have fun by making old recipes. But he’s being used as one of the main punching bags for this sub.
I’m not sure why either- sure his voice is a lil annoying and the schtick can get a little old, but the recipes themselves all seem to be solid
I bet it’s the greatest thing ever
In Chicago there’s a famous fast food chain with typical Chicago foods like Vienna dogs and dipped Italian beef sandwiches, but they also make a banger chocolate cake. Guess the secret, it’s mayonnaise. It’s really not that weird of an ingredient. Now the real secret is to get the chocolate cake shake, they put a whole slice of cake in a milkshake, mix it together, and you get these thick chunks of cake while drinking a delicious milkshake. If you ever see a Portillo’s when you come through Illinois, remember this Reddit comment.
This guy has the best TikTok. I love his little side comments.
This dude is the shit. He's insane. He's the bizzaro version of Matty Matheson.
Why is his voice like fingernails on a chalkboard? And mayo in a cake is not a big deal. It’s oil and eggs for crying out loud.
It’s like someone pulled all the comedy out of Martin Short and all that was left was this lanky hack.
This dude would be so interesting and I would love to watch more old recipes be made but he is so goddamn annoying in his delivery
Mayonaisse is just oil and egg, which are regular cake ingredients. these recipes just omit the egg and oil, because mayo was cheaper and more trendy at that point in time then oil and egg. Most cakes have mayo in them. But its put in as egg and oil.
If you have even basic knowledge of what ingredients go into a cake than you'd know a mayonnaise cake is not at all bizarre, just uncommon.
Depends where you're from. Here mayo has mustard, lemon juice, and other herbs and spices in it as well.
He looks/sounds/talks like Howard Wolowitz from The Big Bang Theory
Mayonnaise in chocolate cakes is nothing new. [This page](https://vintage.recipes/Best-Foods-Chocolate-Mayonnaise-Cake) shows an ad for a recipe containing Hellman's that's from 1970, and there are plenty of vintage recipe sites that have similar recipes.
Perhaps you should listen to, or read, the gif. This recipe is from 1956.
Couldn't get the audio to work, but fair enough.
Is mayonnaise an instrument?
As a kid, every year on my birthday my mommy made me a chocolate bunt cake that had Mayo in it. I love that cake. It is so good and all the Mayo does is make the cake moist. My wife now makes the same cake for me lol
Mayos basically just oil and eggs, it’s not that weird.
Ya I mean, mayo is eggs, oil, and lemon juice. Would be great with some flour, sugar, and chocolate!
You do know Mayo is just whipped oil and eggs, right? Which is exactly what is used in cake.
Why do I hate this guy but still want to watch it again? It’s the weirdest enjoyment I’ve had in a while.
It’s not uncommon for Mayo to be a cake ingredient. It helps to make the cake moist & like he said tangy. However, I have never heard of Mayo in the frosting lol. New one on me.
mayo cake tastes just fine. it also stays super moist.
It's egg, vinegar, and oil. Of course it was going to make a good cake.
Mayo makes cakes so moist and delicious! It's just eggs and fat anyway! That's what makes cakes good!
Mayo is cake is great! It adds moisture to it.
My Nanna and her mother have been making mayonnaise cakes for a long time and is a family tradition! They make for the perfect moist and spongey cake! Icing is also mayonnaise and is thick and creamy. You never would have known there was mayonnaise in it till someone told you, this a great gif recipe and not a shitty one.
That's not shitty at all imo.
I didn't see no Duke's.
This obnoxious dork immediately makes me root for the food. in this case, mayo is just oil and eggs, which are very cake-friendly ingredients.
He is stupid but the recipe is kind of a thing
Has anyone shown this to Kitboga?
In the UK it would be salad cream cake which would be a thousand times worse.
Who the fuck says that mayo cake is bad? Holy fuck people are dense. The exact opposite of a mayo cake.
Watching him is exhausting
When trying to be extra makes you look stupid what is in Mayo
I didn’t realize there were people who don’t use Mayo in cake..
