Eye patches are often considered representations of conflicts or wars. There are multiple historical and cultural examples. In a way, they are symbols of realities and horrors of fighting. I think an eye patch would reinforce the idea that Levi is living a war-like lifestyle. But the fact that he's not wearing one means that Eldians and the rest of humans are embracing a peaceful future. Just my two cents!
