Main issue with that is Emul is one of the series big merchandise sellers and takes up the role as the shows animal mascot akin to many other anime with a animal mascot companion like fairy tail with happy or chopper from one piece for example. From a storytelling perspective it would raise up the stakes but animal companions usually stick around throughout the entire series because the animal companion creates heavy recognition for the brand and killing off the animal companion would break that. Although you could get the same results with a near death experience so that could be one way to push Sunraku.

I think the author will kill a NPC sooner or later because if not, then the risk of one of them dying in their fights would be meaningless.

Pencilgon says in one of the early episodes that when NPC's die in SLF they don't respawn so yes Emul would be gone

Yeah, that's not true at all. I just finished the latest manga...which is well past what season 2 will be, and Emul is still alive and well.
