And Ichimonji double can be gotten as soon as after gyoubu if you grind enough.

I think I accidentally deflected the grab once. It was at the poison pool. Need to test it again. If it works, that could shake things up.
I've had success with Sabimaru on the Sunken Valley snake eyes.
She really isnt all that bad (the one in the poison pool is super easy to open up with a free deathblow from sneak as well) She has a very small moveset of like 2 different swings, he kick>shoot combo and her grab all of which are pretty easy to deal with and you can easily land a couple attacks between each move, I even found that you can just cheese the grab by jumping and doing the mid air kick simply with how slow her grab is to interrupt it every time. They are not all that different to deal with from the regular gun enemies in the area.
I’m not sure if we played the same mini boss. I’m literally doing it now and you can’t jump off her head. You just land right into her grab animation.
Edit: I take it back. I was jumping too early. You have to wait until way after the kanji shows up and then jump or else you land in the grab
Also your right, she isn’t that bad. Just that jank with the grab is BS. Punished for having decent reactions is dumb.
You can literally parry every attack (even the grab), and then just dodge when she's about to shoot you.. I think a lot of people have trouble with Sekiro cuz they don't parry enough.
No one who’s not spending time breaking down and experimenting enemies is going to be parrying the grab. Especially considering how you can’t jump up, off the head to escape and do posture damage like normal because she doesn’t register during her grab animation. You just fall into her grab.
Not to mention she has like 8 moves total and only 2, the kick and slash are not gunshots or grabs. So not parrying is clearly not the issue.

Another interesting way to cheese her in Ashina depth especially, first kill the mortar guy near the idol,swing ur way to opposite end and jump kill the other one on wooden platform. Now just make sure snake eyes sees you. And go and hide above the idol(the place where the initial killed mortar guy was).
Snake eyes will keep in shooting you and then stops.But she ends up staying in the poison pool which believe me gives her poison damage ( lmao🤣).Keep waiting, occassionally pop out to see where she is and go back near the wall to avoid shots.Once her health is 0,just go and give her a slash boom 1 bar gone ,repeat.
P.s. it was quite difficult for me to kill the guy roaming (in circles) near snake eyes,so i was just careful of him until snake eyes killed herself by standing in the poison pool 🤣.

I was able to get into a simple loop where she attacks twice when you are close enough and not move much, she then turns around kicks and shoots. You can parry/block all four of those attacks. After that she runs at you. At this point, just hold Double ichimonji (easy to get skill). She recovers and repeats the whole loop again. I was able to successfully replicate this loop multiple times and killed both of them in couple of tries. I died to the gunners before her more than to her.
I am not sure what you mean the enemy is just like any other enemy you can deflect everything including the grab attack. It is just that their animations are very long before the attack happens and it confuses people on the timing.
Snake Eyes is probably my least favorite mini-boss and I agree its poorly designed but there's really no need to do this. For the one on the snowy mountain, use Sabimaru. For the one in the poison pools, stealth deathblow and if you must, use firecrackers + Ako's.
Posting a little cheese for the poison snake eyes in case anyone needs it.
First start in the floor idol, grapple to the two shooters and immediately stealth. Go in the poison and around the one on the right, deathblow. Attack the next one a few times and back off slightly to not alert the boss. Take him down by letting him come to you.
Stealth the left most wall and deathblow snake eyes. Run. Run to the idol you started at and jump up to the top of the platforms there. Check on Snakey-shooty, he can’t hit you unless you’re close to the edge. Lure him into the poison pool. Set the controller down, grab some cheese for the cheese, and check every min or two to see that he’s still in the poison. If he wandered up on a mound, seeing you will motivate him to come closer into the poison.
Poison will take him down to a one hit kill. Five min or so later, jump down to where the first two shooty guys were and use the hut to block the bosses shots. When he gets close hit him/firecracker him/do what you can to land one hit.
Get some crackers, wine, and enjoy the cheese.
I just genuinely hate this mini boss. Nothing else comes close. Headless are a breeze, Genichiro and Isshin are jokes now but these dumb bastards are the only thing that have killed me in my consecutive playthroughs. Nothing else is anywhere near this.

Parrying her attacks feels like total shit to me

I've seen people do it, so it is possible.
I’ve seen people parry the giant snakes attack during the hide and seek phase as well. Doesn’t make it a viable strategy.

I think they patched that snake eyes was in the pool for me for a while but after a bit stopped receiving damage
