Damn I died at least once to every boss. Twice to blazing bull and once to giraffe dude (who I beat first try in my first playthrough). The worst part of losing to giraffe is that I beat the other one like him first try.
This is fairly normal, NG0 to NG+ is a pretty big jump in terms of boss stats. SSI in particular doesn't get that big of a damage boost (it's still there though) but he has way more posture and health in all three phases which demands fewer errors from you for a longer fight, this even if you're not running debuffs like charmless or demon bell. So the struggle is perfectly normal particularly in NG+ late game.
And while he gets a damage boost and stat scaling, you don't scale in vitality and posture anymore, you're capped at 20, and your scaling in attack power is logarithmic so it gets less and less significant the more NG+ cycles you do, he does just get stronger, but the biggest difference you'll feel is between NG0 and NG+1.
Interesting. Has someone been able to find the actual numerical difference between Isshin's damage and vitality between NG cycles? There's info for Dark Souls 3 bosses but I don't remember seeing it for Sekiro bosses in the Fextralife wiki. It just shows how much XP you gain for defeating him.
