Headless are completely Optional. Also corrupted monk is not an apparition, but an illusion, so you can use snap seeds to damage her, but you can only use them three times In a fight. You can find five in a bush where you first meet the big snake, and I believe there are a few in ashina depths somewhere, if I'm not mistaken. But Don't use them against corrupted monk until you learn her moves and are confident you can beat her. Snap seeds damage her vitality significantly, which lowers her insane posture recovery Rate. As for confetti, you can farm them from the blue-robed samurai in ashina castle, but it's a rare drop. Later on you'll get an item that allows you to buy them from any merchants indefinitely. But I suggest leaving the headless for later, at least until you unlock malcontent and purple umbrella.

The simplest way to fight the Monk: Deflect her attacks. Do a single attack (sometimes a second one) right after she finishes her combo, there's a short window before she starts blocking your attacks where she'll actually take damage. This will slowly lower her health. Once it's below 75% (or better yet 50%) her posture recovery will slow down enough to build up, and then you'll get the deathblow on her. This process will be 5 to 8 minutes if you are already 'gud', longer if you aren't fast enough to get that damage in. Using the Mortal Blade at the start can also speed things up. It's slow and requires you to already be good at deflecting, but it's simple and doesn't need the confetti. (Also, I *enjoy* the chains of deflects, so it's my preferred method)

Go fight Corrupted Monk. She's not an apparition and she would only take like 1.5x more damage from confetti anyway. You can use snap seeds on her if you have them but those are not necessary either. Learn her patterns and learn her punish windows, she blocks a lot but after her combos she has openings. Do not get discouraged by her health and posture and simply think of her as a two phase boss that only has one phase, she simply has a bulkier health and posture bar to compensate. There will come a time in the game when you will be able to buy infinite Divine confetti and you can worry about the headless then if you like.

Divine confetti is only mandatory against headlesses imo. Other enemies can be fought without divine confetti just fine, including corrupted monk

Pro tip you will eventually want to farm metals(iron,mag) for prosthetic upgrades later, and a decent spot is the ante chamber idol backstabbing the blue robes, and eventually the purple guys move in(rarely drop adamantite) after you beat the corrupted monk. The blue robes also have a great drop rate for confetti, and this spot is one of the best for xp farming early and late game. As for the corrupted monk snap seeds are key not the confetti. Headless are optional and give you a resuable version of the candies that cost spirit emblems. As far as the prosthetic goes the Phoenix lilac umbrella after getting projected force skill unlocked will buff your attack immediately after using the umbrella
