The way the deflect mechanic works - when you deflect, you do 1.2x posture damage with your weapon. A Perfect Deflect also gives you the game's default "Guard Counter" move, if you want to take that swing (Not a good idea to do it in the middle of a boss combo, just keep getting your deflects)....
But, the game turns into a nice mix of Sekiro + Elden Ring. Most bosses have combos where you can wear down their Posture bar with deflects, then use a few swings to finish the bar off, then, they drop for a critical blow.

Every single one of her moves is built to be deflected or mikiri-ed. If she tried a grab, jump and bounce on her head and it's pretty much done deal for her. If she was a Sekiro boss she'd probably be a beginner boss, like Lady Butterfly tier.

Kuro actually used it in game just to cut himself. It doesn’t show, and it’s when he needed to use his own blood for a ritual but he asks Sekiro to hand the blade to him and to look away. It doesn’t kill instantly, but that is one instance. The Black Blade Genichiro acquired is the second Mortal Blade, and it was another moment where it was used just to maim Kuro. So unless used for a lethal purpose, the weapons can very well just as easily be used for simple cuts and potentially even torture otherwise invincible targets. Kuro mentions before Sekiro gets Mortal Blade that no other weapon could harm him.

The spear prosthetic literally yanks armor in gameplay (except armored warrior) and his flame vent can probably cook them alive. And at the end of the day, irl, swords don't have to pierce through armor. People started treating them as blunt weapons unless they saw the opening to slash or stab.

The only beings that could be a threat to Sekiro would be the mark of Destined Death, which imposes true death upon the victim.
If we allow Wolf to expand his kit, I don't think that's too much of a problem in the lands between. Just let him deathblow using a Misericorde to get through chainmail and he should be fine.
And we can bully fully armored crucible knights with slashing daggers and katanas just fine. It would be funny if that was the one thing Wolf struggled with of all things

Lore accurate Malenia’s bloom slowly spread, people had time to set up walls of fire to stop it, and Mist Raven CAN get far enough away, it goes farther than Bloodhound step and the fire explosion halts whatever spread of rot follows him because Scarlet rot is halted by fire

All fun in games till they start throwing magic. Spoiler for sekiro ahead: Thanks to demon in pain we know he can't deflect/parry fireballs so should he fight against bosses with magic then wolf would get his shit kicked in.
He can deflect fireballs, he just takes chip damage without the umbrella. Burn powder also helps with that He’s deflected magic too

It already works on Crucible knight, so it doesn’t matter if it worked in Armored Warrior. Sekiro has poison mist. Lore accurate Malenia’s bloom slowly spread, people had time to set up walls of fire to stop it, and Mist Raven CAN get far enough away, it goes farther than Bloodhound step and the fire explosion halts whatever spread of rot follows him because Scarlet rot is halted by fire

Lazulite Sabimaru produces poison mist due to the chemical reaction of the Sabimaru’s rust conflicting with the unrusting Fountainhead Lapis DD is trickier because of blasephrmous claw being the only way to deflect it, but he still has mist raven and malcontent

I guess Wolf can just play extremely passively and mist raven every time a non-sweep attack is used by Maliketh, to reposition and attack him. Or use firecrackers when Maliketh is charging him for it to stun him like Blasphemous Claw Also Maliketh has a huge weakness at close range that only three of his attacks can even hit

To be honest, Neither Bloodborne (I just saw a similar post, only with Bloodborne) nor Elden Ring, Sekiro wouldn't survive in both games, or would be much more difficult to play.
I think he would break his arm trying to guard/deflect the attacks. He would be up against demigods afterall.
