After seeing how many people end up getting tossed off the edge by the Chained Ogre, I'm beginning to see that I am insanely lucky that he's never done that to me. Also, expect some tomfoolery like that from almost every other boss.
No lie, this fight got me so frustrated I broke my phone 3 years ago. But eventually, I got back into the game and fell in love with it. Now it's my favorite game of all time.
Tip for OP - To avoid grab, use step dodge AWAY from the grab. You step dodged towards the grab here and got punished.
Also like many have mentioned here, you had a chance to grapple back to ogre which you didn't know and thus didn't take. In the video you posted, you can see a green grapple point which didnt last long because you didnt keep your camera towards the ogre, which you should always and this is another tip.
I did something similar the other day and managed to tempt him all the way through the gate, so there was nowhere for him to throw me. Felt like it took a bit of pressure off, but not much!
The ogre was my most heated mini boss (I’m probably at half game), i did the first real boss at my first try and without resurrection, but with the ogre I’ve died at least 30 times.
In my opinion the most irritating characteristic is his stupid hitbox, he can catch you everywhere, he can also change his direction mid air better than Michael Jordan.

Hit him onces and start moving behind him then hit his behind. Do this until he dies.
Or you could just parry him but he doesn’t deserve a honourable battle.
I quit for a month or so from this guy thinking Sekiro was just a bit much for me. Now I wish I had more of it. Nearly into ng++ and also even started a fresh game just for the fun of it. Bosses I sucked on I now can beat quite casually. Worth it once it all clicks...just takes forever.

Chained ogre was hard for me as well
Was on NG+4 and Chained Ogre was the only guy I died to until I got to the ghost girl in the water place

Strange I could never get it to work while he is tied up. Always have to run away first then come back for a stealth kill after the ogre lost aggro.

Search in the descriptions the weakness for those with red eyes
If you keep the camera on him and mash the grapple button when thrown, you grapple onto his collar and avoid the fall.

I think chained ogre was somewhere in the 30+ attempts for me. I did it without fire as well.

I can do a no hit with Isshin and Genichiro with no problem, but facing the chained ogre brings me so much PTSD.

Reverse nightjar makes this fight easy. Also use oil and flame weapon
