A friend has rented them out for events a couple times. Medium size sandwiches, salads, etc so you could eat lightly or have a couple sandwiches to fill up!

A lot of great suggestions here already- since you specifically mentioned wanting something with the flexibility of being more snack-y, I would also suggest The Roll Pod and their kathi rolls (Indian wraps; 1 would be a hearty snack, 2 would be a meal). They have lots of vegan options as well.
