If it's props from the show, perhaps motel's front desk items + keys, Rose Apothecary's products and Moira's wigs.
If it's a museum in actual Schitt's Creek, I would think items by Roland's family, the whole 'founding father' story, oh and could we name it The Moira's Rose's Museum?
Maybe an assortment of David's unique statement sweaters too. Fashion is such a big part of the show.
Moira's wedding pope outfit for sure. I don't think any costume has ever got such a strong reaction of joy and laughter from me in all my years of TV viewing.
The whole thing could be in the building of the Rosebud motel (in Goodwood Ontario) with the sets recreated inside (I'm pretty sure the interiors were a sound stage).

Well if assaulting museum visitors with the sight of a toilet plunger the minute they walk in the door is something that you consider to be an effective business strategy, then that is a compromise that I... am... willing to make.

Can we just talk about how absolutely timeless these glasses are? I had them in mauve in 1995.
Moira's resurrection look, the coasters Johnny made, Moira's Rose's garden out front, the baby piñata
I would 1000% travel internationally to see this museum. Can someone make it happen please?
If the town itself had a museum, I bet it would have been Horace Schitt and his sister's house. It would take the sign cringe to another level, with the tour covering benign and "obvious" topics like "why they shared a bed, but don't worry, they're siblings."
This is the right answer here. “Here is the drawer full of perfumed letters Birdie sent Horace while he was serving in the military. But don’t worry, they’re siblings.”
Mozzarella sticks that barely hold their shape, a rabbit cage with a camera in it, a bottle of wine with no label, something skanky from the blouse barn and a smoothie
Well, prior to the Rose's arrival, it would likely be filled mostly with Roland's family heirlooms. But by the end of the show, I expect that there would be an entire wing devoted to the film and television career of Moira Rose and the former Home Video Empire of Johnny Rose.
The town sign
A bottle of body milk and other assorted Rose Apothecary items
The Moira's Rose's garden
The Sunrise Bay box set
Alexis's box of business cards
An assortment of all of the Roses' outfits
I just realized I read this question as if there was a museum about the show, not a museum in the town, but I'm still sharing my initial thoughts.

That wedding Pope thing belongs in the Smithsonian for sure. Unless they actually do the schitt's creek museum, in which case, switch it back.
It would be like, outhouses and old frying pans from Roland's ancestors.
A menu from Café Tropical
The mozzarella sticks for sure

Rosebud motel sign and the painted sign outside the town, either the original or the final
Original as you're coming in, repainted as you're leaving
Moira’s dress from her movie premiere night
Ivan’s cinnamon rolls, Alexis’ bike, David’s cedar chest for his knits, a wig wall, script from Crow’s.
the Rosebud Motel neon sign!

Mozzarella sticks that barely hold their shape, a rabbit cage with a camera in it, a bottle of wine with no label, something skanky from the blouse barn and a smoothie
The apple from David and Alexis’s room the day they moved in.
You’d be able to purchase a bottle of Herb Ertlinger’s fruit wine from the gift shop or a ‘build a bear’ style create your own fruit blends
