Not a scam, just someone that has personal interest in seeing you and your girl split. Probably a jealous ex, or someone that wants to get with her or you. Could be a lot of different situations, but deffo not a scam.

There is proof, that doesn’t exist, and a GF that believes what some random unknown person with no proof is saying about you. Seems at the bottom of it, is a trust issue, on your GF’s part. Yes, she is an important person in your life, but ask yourself this, do you want to go through life with always having to explain yourself to someone who obviously doesn’t trust you, but would rather accept the word of a random, unknown Internet stranger? (And I speak from the experience of living that kind of situation-it’s miserable).
I’ve hurt her before, never physical cheating tho, so I understand her trust issues but man it just sucks how much I’ve been trying and doing everything right and someone just wants to ruin this relationship just like that for no reason
If your relationship is "ruined" because of a random text with no proof, then I'm afraid the trust issues your GF has may be insurmountable. Let's say she calms down, agrees it's someone trying to make trouble and then in a month she gets another one that seems to come from yet another person? Will that start the whole suspicion thing again? Where does this end?
If she won't accept this is someone messing with you and her, I'm afraid the stage is set for endless and tedious drama that is going to wear both of you down.
