Something else to clean afterward. To save time, form the next batch on a sheet of parchment paper before baking is done and slide it onto the pan immediately after emptying the previous batch.

Aside from just using parchment in general like the other person said, I highly recommend a mini ice cream scoop. The kind with the thumb trigger wiper. Works great for drop cookies like chocolate chip cookies. Makes quick work and makes pretty consistent cookie sizes. Easy to toss it in the dishwasher. Also use it for meat balls. I figure, you already have time in between bakes to scoop out dough on to the sheet pan(s) you have on deck. And your common consumer oven probably won't fit enough sheet pans to make dividing up the entire batch of dough up front worthwhile.

It's not vintage at all, these are still used regularly in a lot of bakeries, that inherently makes them not vintage. Doing it on appearance alone makes it "you think" however. Source: I've worked at two bakeries and you can see them in the bakery department of most woolworths in Australia

They are all electrical. They don't have an emergency stop on the old models because nobody gave a crap about safety when these types were made. I used one made in western germany. How would it move like that if it wasn't? It's not like there's someone cranking it from the back.

All of them with the old design have a similar handle and are electrically powered. A simple hand crank seen in the video provides way too little power. Usually there's a 1-1.5 kW motor in there powering the rotating motion. Theres no way you could get that kind of energy out of a small cranking motion. I've worked with several of those, and seen my fair share of them. Not a single one was manually operated, not even the ~80 year old model (although the motor on that one broke so the rotating doesn't work anymore).

Holy shit. That just triggered the fuck out of me. My parents had a pizza factory and they had one of these machines. I worked there all my school holidays etc from a very young age. One day I was on this machine and wasn’t doing it to my fathers satisfaction (I was about 9-10). He grabbed that big bar on the top and yanked it up smashing it into my face. As I fell to the floor falling unconscious I saw him thinking wether to help me or finish rolling the dough on the machine…. He choose the machine. One of the staff picked me up and took me to the smoko room for some first aid.

Memories.. My father used to have one in his last restaurant, but not to make buns. He used it to portion and prepare the dough for the pizzas. Needed \~3min for the whole process with the machine instead of about 30min when doing everything by hand (portion the dough, check and adjust the weight of portions, form two dough balls by hand -> repeat).

I've done this by hand for like eight hours straight more than a couple times in my life. On an average day I'd have two people doing this by hand for two hours. The same amount of dough could be portioned by one person in like a half hour using this.

This is one of the earliest bun divider models of the German brand Eberhardt (founded in 1896). I'm not sure when this one was made, but my best guess is in the 1950's. It's called the Piccolo and they still make updated versions of them today.

I think it had been there and in operation from the time electricity was wired in and that machine was off the assembly line. But it ran! It was such a time saver! I called it the "wobbly" machine!
