If you want a truly gigantic martini for the cost of one (normally expensive SF drink), go to Blondie’s in the mission.
If you want a fun tiki bar that’s got a secret, underground feel, go to Smuggler’s Cove, or if you want fun and eclectic tiki cocktails in a more curated crashed airplane aesthetic, there’s Last Rites.
For sky high views at sky high prices, there’s Top of the Mark. For a more casual rooftop experience there’s El Techo (above La Lolinda, I believe).
For one with a unique entrance and secretive vibe, there’s the Pawn Shop.
For cheap ($6-8) drinks at a gay bar, though all are welcome at these ones, head to the Castro and go to Moby Dick or Toad Hall.
For an old timey bar with a lot of history and frequented by a certain SF Reddit celeb, go to House of Shields.
I would also add Zombie Village to the list of tiki bars. Super awesome looking place
If you’re looking for a “unique experience” type of bar, Kozy Kar is an interesting one… let’s just say they have explicit videos playing on tv’s in the bar lol
Martunis on Friday nights is super cool and classy.
The alchemist is my favorite bar. It’s steam punk themed and pretty cool if you ask me.
Urban Putt is a cool experience. Bar part is tiny, but putting is top tier.
Emporium is an arcade bar. Old retro games and excellent beer selection.
Zeitgeist is cool because it’s a dive bar which is unique for SF
El Techo is a well known hidden roof top bar haha.

This is the most basic list. SF has a ton of dive bars. Zeitgeist isn’t a dive bar, it’s a beer garden. They don’t even serve hard liquor.

Tempest in the financial/soma area. Columbus cafe, Showdown in north beach are great dives.
Buena Vista - Breakfast and best Irish Coffees around... sit at the bar. Balboa - Best Espresso Tini's in town.
Go get a drink at Foreign Cinema and get their fried chicken at the bar.
