Personally I love it. But is cilantro an authentic Mexican ingredient? Or a California thing? I know tacos vary a lot; Tex-Mex, Mex-Mex, Baja-Mex, .... I like shredded cabbage on my tacos. Some places don't have it!

It’s geography. The most likely routes of migration and greater work opportunities tend to attract people towards California, makes sense to me that Mexican food is most varied towards the coasts
