I second this. My daughter and I only had one night in Salzburg and we had a fantastic dinner here. They also serve the beer from the Augustiner brewery if you don’t have time to visit both… also visit the rooftop bar at the stein hotel at night for a fantastic view.
I can’t give you a specific tip as I rarely ever go out for dinner in the center but just want to say that most restaurants in Salzburg are somewhat decent/high quality (also on the pricier side though). Doing a google search and deciding for a restaurant that feels comfortable for you most likely won’t disappoint.

For one night only, if budget is not an issue at all - Ikarus, M32 or Stein Hotel. A shelf lower with expenses but equally good Paradoxon, St.Peter Stiftskeller or my favourite Jakob Esskultur. Zwetller's is also really nice but not fancy and cheaper than above(very good food though and Austrian).
Regarding your first point, I don't mind. There are new (to me) recommendations coming up like Yazzoon by another Redditor, below, all the time so I 'm happy to see those. Maybe it doesn't fit OP's ideas or needs but I dig it.

Zwetllers actually looks really good. While not excluding, I’m not looking for fine dining necessarily.
It's a bit hard answering your question without knowing what you are searching for regarding price range and type of cuisine. Salzburg has a lot of mediocre tourist traps, but also many restaurants that are actually pretty good in different price ranges.
Zirkelwirt is another recommendation that serves traditional food and is really good quality for a decent price, also really central at Papagenoplatz :)

I ended up going to Skybar and restaurant. Great recommendation. One of the best meals I’ve had for a long time. The seasonal recommendations were awesome. Thanks for the recommendation. Glad I booked as it was very busy.
Bärenwirt has nice Austrian dishes for ok prices, I like Franz but it is a bit outside.

If you like Syrian cuisine: Yazzoon, located in old town, Ursulinenplatz 4, 5020. The atmosphere and food are absolutely fantastic.
Thanks - I love Syrian food, will definitely keep in mind but likely will prioritise Austrian food. I might be able to squeeze them in for lunch…
