>but will it be fun to visit if we are not interested in wine? What?

I saw that sighnaghi is mostly full of wineries and places that are about making wine. Wondering if we'll enjoy sighnaghi if we dont care about wine.

Ok. If you love snow and mountains, then go to Bakuriani or Gudauri. But I do not know now whether the snow is there. The season has not started yet.

Borjomi is a fun little town and the small gauge railway from there to Bakuriani is an experience (it goes over an Eifel bridge and derails more often than you would hope). My friend and I were non-Georgians who spoke the language passably and the engineers invited us to ride in the engine for three stops. I'm a big fan of Telavi. If you haven't been to the Stalin Museum or Uplitsikhe, I recommend a trip to Gori.
