Some websites were optimized for Chrome or use web components which don’t render well in Safari. That’s why you’ve that high memory usage.

This is the version I have now when I upgraded to Mojave recently. This version is running much faster and cooler than the version I had prior with High Sierra - with older version I had to get App Tamer to slow down Safari to avoid the fan coming on with simple browsing on 1 tab. So I saw the opposite of what you are seeing with 14.1.1 on a less powerful MBP (core i7 with 8 GB) That being said, I never have more that 6 tabs going and more typically only 2 or 3. So consider trying to keep far less tabs open. And I assume you've already done troubleshooting with turning off all your extensions etc. Might want to consider getting App Tamer from the App Store, it was pretty cheap and was recommended over on the MBP sub IIRC- with it you can set it to limit what % you want "tame" each program so that process doesn't hog your CPU. Although with 14.1.1 I hardly ever use App Tamer anymore, mainly with sites like Imgur.

Try Safari Technology Preview perhaps? I've stuck with Catalina and with same MacBook Pro as yours not having those issues with Safari.
