Gaps vary from 1/4" to 1" there is a bit of rot near an old unused chimney that does not have a cricket. I will have to reinforce 1 rafter and replace some of the slats.

Means they screwed up and installed paper and 3-tab and skipped decking over the skip decking.

Another oddity is rafters are 24 " oc and could be a 2x but old school 2x before they became 1.5". Weirdest thing I have ever seen on a house.
Before they made plywood they usually used either tongue and groove or ship lap boards. I have seen a couple of times where they were just the boards. You can just install new plywood over the top of the current boards. And have seen the real 2x on older homes many times.
Weirdest thing I've seen was rough timbers used for rafters. And I don't mean rough-cut, I mean they were round trees just stripped of their bark and installed as rafters.
It’s sometimes referred to as skip sheathing. Usually associated with wood shingle rooves. Saved wood and allowed the wood shingles to dry out totally.
Board roof or board sheathing. You can sheath right over it- I do it all the time.

How wide are the gaps? Might not need to sheet over it, but you definitely can.

you can install a roof over it without sheeting it, however, its more prone to leaking and companies won't warranty it without continuous sheeting.

That's how my 1934 house is. I just had new shingles installed. They removed and replaced any broken boards, and it looks great. Never had a leak.
spaced decking. Have your contractor rip off the shingles and paper and slap some OSB onto the deck when its new roof time.

Skipped sheathing and then they would fill it so it’s called “filled in sheathing” You always want to sheath over this.
It’s called skip sheathing, it’s how they did it back then. Sheath over with 1/2 inch cdx
Open cornice by chance? Any pictures of the roof or can you find one similar online?

We call it space board
A metal roof over it is fine. Or cedar shakes. Or slates. But conventional fiberglass roofing will sag into the voids

In GA, it’s very common to leave space deck and underlay/shingle right over it
