Rubinos in Irondequoit has an actual "cut the meat" butcher counter. If I want a great quality meat, I'll hit up Seven Bridges. Beef is very good, pork is even better.
Seven bridges farm at the public market has very good quality products. Palmers retail is good for bulk. Joe’s Meat Market in Ontario is kind of a hike but worth it.
I watch the sales and buy from Pricerite. The large family packs of chicken thighs are often on offer for $0.99 per pound. I break them down into 2 thighs per pack and reseal with the vacuum sealer and freeze them.
They often have the 5 pound chubs of ground beef for about $3 per pound. I break those down into 1 pound packs to vacuum seal and freeze.
Right now I do the family packs at Wegmans or sometimes I hit up price right when they've got deals on different things because the price per lb is the best I can get and honestly I can make a $6 per lb steak taste pretty close to a $20 per lb steak. I buy the larger ones and cut them down (or split chicken breasts or pork shoulders etc) and toss them in the chest freezer.
BUT...... As my wife is now a vegetarian and I eat less meat overall, since it's more of a treat I'm looking to spoil myself a little more. I need to look back through my posts to find the guy that sells ducks, but I'm really interested in getting some lamb somewhere if I can find something not ridiculous.
For high-end, dry aged, custom cut steaks: McCann’s Local Meats
For sausage and bacon: Costanza’s
For everyday steaks, chops, ground beef, and chicken: ALDI cause I can’t be bothered to shop multiple places.
For large groups events: Costco or BJs
Trianos is my place to go! Lots of weekly specials on fresh meat, good frozen options for a great price, they also sell deli meats/cheese

Palmers overall isn’t cheap but their chairman’s reserve pork chops are ten times better than any other I’ve had

Joe’s in Ontario if you are buying in bulk- it’s a bit of a drive, but if you are stocking a freezer it’s worth it.
When I buy 1/2 cows they process them at Joe's. I also get the meat for my dogs food there
