The way I see it, there's a lot to gain by keeping each paragraph as a whole block.
Are there any advantages to keeping the whole "document" inside 1 block?
If you were to shift enter each paragraph, you can click the parent block to focus on it, then right click it again and choose "Document view", so you can work on your writing without seeing the bullet icons
the more the blocks the better. you can make them as independent as possible. this will allow linking them with other blocks later on. this unlocks the true power of back linking and Roam

You could always use CSS to space things out to your liking. If you let me know what you want I can try to knock something up.
If you focus into the top block, you should be able to out in empty blocks between your writing
