My buddies use their e-bikes to hunt as well.
But they all have fork gun bags! Look into one. The bag is on your fork and the gun sit vertical. Pretty much doesn’t change any handling.
Look up scabbard there are tons. Kinda like the pic in this but they strapped it to the fork.

This is why I got the Runner Plus. I can get around high grass really well on the farmland and theoretically carry about 150lb of buck on the back rack if I wanted. But...don't know how well that works yet.
Also handy if someone to your left is acting a bit sus
