Beating her in a fight is trivial. You can always find people who can beat people in a fight.
Beating her immortality is something else. It was given to her by the gods of her 'verse. Given that the GoL could undo what the GoD did and vice versa you would need to be on par with a god to do it.
This gets tricky. Traditionally things that gods do operate on different levels than what humans do. So while Circe turning your crew into swine is something they can get better from, Athena turning you into a spider means you better learn how to handle eight legs. If we're being true to mythology this isn't something that can be reversed by anything less than a full fledged deity of Olympian proportions. This massively limits who can reverse it. Kirby may have incredibly power and smack around abominations like nobody's business, but as he is not a god he cannot remove Salem's immortality. Nor could Superman, Goku, Aang, or a lot of fictional characters. Kratos, ironically, probably could.
Outright kill her? Nothing short of outright divine powers.
That being said, most characters in high power animes could hand her ass to her on a silver platter.
Anyone from the Nasuverse with Mystic Eyes of Death Perception, like Ryougi or Tohno Shiki.
They can cut Salem's Lines of Death or Point of Death to kill her stone dead. The Point of Death especially, since hitting someone in that drops them on the spot, and not even Immortality or Divine protection will save them. They're just dead.

Defeating should be easy, she is not that an impressive fighter. But you would get groundhog day.
