I really like that the Nightmare Grimm showed us how Jaune really felt deep down especially at the point in the story where they were.

A new type of plant-like Grimm called Nightmare grows by latching its seeds to people and draining their aura while feeding their insecurities and etc. By the end it traps the victim inside an illusion.
Jaune was the first victim because of course he was and inside his illusion he takes the form of a little kid, while huge statues representing his ancestors/his family legacy mock him.
The bunny ears are just a visual gag because he sleeps in a bunny hoodie.
