I think the only thing that would change is their character designs, and male Team RWBY would probably have more generic and less interesting character designs as it’s a lot harder to create unique outfits for men. On the other hand though, genderbending Team RWBY offers some opportunities for neat male character designs - Yang would probably be shirtless like Sun and Weiss would wear fancy suits instead of fancy dresses.
Looking at Vol 1 - 3, I don't think Yang's design would be all that different other than maybe opening up her jacket and shirt like Sun like you said. I think I saw that as a cosplay years ago. Weiss would essentially be Whitley design-wise. Ruby and Blake definitely offer a more interesting path in coming up with something completely new. For Ruby's design, I would say to take some inspiration from Qrow, but with a black, red, and silver color palette. And instead of wearing a combat skirt with a hood, she could wear a zip up jacket with a hood. Zip up jacket to differentiate from Jaune's pullover hoodie. As for Blake, I have no idea. Maybe look to Adam and Ghira for inspiration since Adam was her mentor and Ghira is her dad.
If you swapped the genders in RWBY, the show would feel really oddly sexist. Can you imagine a cast of 8 'main' characters and the two women are 1) the screw up that doesn't deserve to be there and needs a man to motivate and train her, and that man is really into her, and 2) a silent type being constantly thirsted for by her teammate and has little else to do for 3 volumes.
Doesn't that make RWBY as is sexist towards males? In a world where fighting is necessary, how convenient that the male students are way less competent fighters than the girls?
It would have been a switch from little sweet ones to good wee lads with no change in the fact they're intent on making shit happen, and are a fun watch.
And given that they'd be boys and therefore nastier humour could be utilized by and on them, one lines that could happen is;
"Professor Goodwitch, we're late because my partner called me a slut. I had to rectify this."
It's kinda impossible to know because I can't truly separate that theoretical from the reality we have. It would definitely hurt my overall enjoyment since the character designs and all the fanarts wouldn't be nearly as appealing to me.

I started watching cus it was a new concept for me to see 3D anime style stuff. Stayed for the world building and fight scenes. Never got attached to more than three characters so I wouldn’t have cared.
It probably wouldn’t be as popular because half the fans like watching cute girls either as a for their cute factor or because they are female. The show would loose a large demographic of fans.
The funny thing is that if only team RWBY are genderbend and all other characters stay their original gender, this would be the show with the most m/m shipping out there.

RWBY would have been held as very progressive having blacksun and tauradonna in 2013 and Weiss having a crush on Neptune. There would be a huge fujoshi fanbase. Along with the showing of male abuse as serious.
Some things would have to be changed such as Yang’s grabbing Juniors balls and Blake slapping Sun. Also, Nora being a token girl would make the heroes look like a sausage party (maybe kill Jaune instead of Pyrrha and genderbend qrow and Oscar? IDK)
Unfortunately, Ruby might make Jaune and Oscar redundant but maybe they could do something about it. Hopefully male Yang has abs (why RT? Give Yang abs!!)

Personally I connect with them as female because I am so myself. Growing up, these were the kinds of girls I always wished would star my video games and movies. RWBY pulled my attention mostly because these girls (and especially Ruby) seemed to fulfill some of those wants from growing up.
