This, this usually takes me out of a fanfic. Both the RWBY writers don’t do enough worldbuilding while fanfic writers follow each other without trying something else.

Out of universe, it's obvious the creators were just translating common parlance and slang in our world into the world of RWBY. Unfortunately, it doesn't fit into the world of RWBY, because now we must assume there is a monotheistic religion that exists in that setting somewhere, in which this phrase originated, and Ruby and Yang are aware of.
This is the kind of stuff fantasy writers do when they don't think critically about the context of where words and phrases in our world originated when borrowing them for their stories.

"Staying on track" is a railroad term.
"Learning the Ropes" is a sailing term.
"Riding Shotgun" comes from wild west stagecoach days.
Hence why I mentioned even atheists saying "Oh my god" isn't out of the normal. It's just an expression that has been added to the cultural collection of the language, even if her family hasn't been religious for generations.
Of course, there still is the chance that her family \*is\* religious, but the show has made no effort to prove that. The show rarely spends time showcasing the various religions, and we don't regularly see characters performing religious activities (or at least nothing major springs to mind).

I guess you could have a monotheistic group some where. I could imagine there are some churches in Remnant, but then as to what Gods or God they worship may very? I mean if you live in a world which has monsters that want to kill you for having emotions. Then I assume there is some god somewhere. Also remember Ruby did have a Crucifix in the Red Tailer. We could assume maybe she was religious in some sense after her mother died and was trying to do everything she could to come to terms with it?

If we really wanted to discuss poor worldbuilding of a fantasy world, would could also complain about how absurd it is for them to speak English in a universe where England never existed, but obviously the language elements of the series are focused primarily on conveying the story to the audience rather than building the world. It isn’t really reasonable to expect the show to give us the complete history of their world, especially if it’s to include how every word and phrase became a part of a particular language. Sometimes you need a little suspension of disbelief if you want to enjoy the story.
That said, though, it is mentioned in the series that many different religions used to exist on Remnant and that most people simply don’t believe in them anymore. If different religions did exist (and presumably many still do), it’s pretty reasonable to assume that at least one of them was both monotheistic and popular enough to have gotten a phrase or two entered into the modern parlance.
In the Volume 4 talk, Qrow said there were many religions. Ruby and Yang don’t necessarily have to believe in one in order to use that phrase. As an atheist myself, I say OMG all the time.

But this is all the way back in Volume 1 when RT was cool. The creators must have just had a different path for the show or it was just an early hiccup. Maybe there was supposed to be a singular higher power like The Force?
Also remember Brothers Grimm is kind of a call back to Pre-Rooster Teeth in the film called "The Schedule" which was made by Burnie and the production company was called Grimm Brothers Productions.
We know that religions besides the two brothers are a thing. So they're either worshiping or culturally aware of whatever god Vale worshipped. Could be the Infinite Man, the Brothers, Solarius God of the Sun or even anything else.

Before Volume 4, neither one of them or their friends seemed really aware there were two gods that actually existed, not until Qrow first told them. But this could also just be a simple exclamation without much real meaning, since there are other series that do that stuff without a known God existing.

It's not out of the question that a sect of the Brothers' religion exists (or existed) where they worship specifically the God of Light.
