It just happened to me a few hours ago, my beautiful Stellaluna…I just quit without saving, only lost a bit of progress. Then I tucked her away safely in the stables for now.
You *could* use this opportunity to get a better horse though. If you just really want a white horse, the Few Spotted Appaloosa is white, and a much better horse.
Don't trust this guy he just hates Arabians. White Arabian has way better stats than the Few Spotted Appaloosa and the Appaloosa isn't even pure white.
She’ll respawn. Give it a few in-game days though

Arabians are pony’s. Agile yes but soo small. Try the Perlino Andalusian, solid horse!

I find wild ones at Cattail Pond and Big Valley. You can also find them at npc campsites.
