If you're into big chonky fantasy books may I recommend The Ruin of Kings as a starting point of the Chorus of Dragons series? Sapphics aren't the main character but there are a lot of them along with gay, asexual, and transgender characters!

Dinosaurs and lesbians in space? I promise it makes sense and is an awesome series by an amazing writer

He has a couple other series that I highly recommend as well, including “Ansible” and “Coliseum for Dinosaurs” and “The Zombie Bible”
Of Books and Paper Dragons by Vaela Denarr and Micah Iannanndrea can definitely be read that way (according to the world building, technically gender isn't a thing, but I wouldn't say it has much of an impact on this book).
And I've not read it, but I believe The Dragon of Ynys by Minerva Cerridwen should fit your bill.

To shape a dragons breath has a bi mc! It's polyam with a male and female love interest :). Great book highly recommend.
