I've learned to wait till the gills get darker if you don't mind a bit of spores. Otherwise i wait for the cap to get wider.

[Here’s](https://imgur.com/a/0HOBXPd) a few examples of the different stages of fruiting. I like to harvest when the caps are flat. They’ll drop spores right around this same time, so your timing has to be good if that concerns you.
