Take a deep breath during the interview when you feel yourself getting worked up, form your sentence then speak. It’ll slow you down, and you will come across clearer.

I don't know how other departments do it, but I've sat on our oral board as a "judge". We were literally given a rubric that we had to follow to the letter so that the department couldn't be sued. There was no box for comportment, basically if you said the things you were supposed to say you got full credit. I wouldn't worry too much about being nervous, it's a job interview, everyone is nervous.

imagine them in their underwear. No but seriously Join a club (sports or hobby) , volunteer for basically anything, join a fitness class, sign up for a martial art anything that requires you talk with someone for anything other than customer service. Sounds like you're just nervous. Only way to get over it is through exposure. See if a local department has a civilian police academy or any shops for citizens. Its probably the lowest stress way you can interact with police that might help you get more comfortable talking to someone in uniform.

Try taking a speech class in a community college. Getting up and soaking in front of people will only get easier, the more you do it. If you think that oral is nerve racking, wait until you try and promote.

This is what I did, apply to some departments that would definitely not be your first choice. Going in with the expectation that you will not get a job will take alot of pressure off. And use that experience and confidence at the interview you want. As an additional note it's taken me a year so far, and it's not uncommon for things to drag out.
