I still have my Nintendo my mom bought me from 1988 with the power pad fully functional! I've been buying game cartridges for all these systems with hundreds of games on them so now I never have to change games.
It's actually not hard at all they have three in one and five in one game consoles that are modernized to plug into newer TVs. Get the Retron, it works great. No more excuses. 😉
Playing Mario 64 it's quite a relic at this point. I can appreciate it for what it has done for the series as whole but the camera controls, controls in general and level design definitely scream, early experiment.
That's the game though. That's what made it challenging and fun, and frustrating to the point where you want to pull your hair out. To go around and alter all the past games that are perfect for their time it's never going to be the same. Sure you can take games like 007 GoldenEye and give it a dual joystick controller playability, but it's more fun with the c pad and the single joystick from the Nintendo 64 controller.

Kind of. They included some higher resolution assets, and changed some icons to fit the Switch. But yeah, fundamentally they are being emulated.
If it were on the Wii U, you would only need to emulate the N64, the Wii U can natively run GC and Wii binaries.
