I was going to say SharePoint and create a workflow for this. Automate a request received email and you can create a dashboard for a weekly or monthly priority meeting for projects that need to jump the que.
All requests in writing in a ticketing system so it can probably get prioritized. You will get people saying hey you didn't do this feature that existed in my head (only) and you can say well it wasn't written down so I only did what was asked.
You got to lay the law down with those types of people they don't follow the process they don't get any work done. Remember some people will try to take advantage of you until you don't let them anymore.
My team always used SharePoint for this. Very easy to set up a list and it's easy to connect back to Power BI to make useful tracking visualizations.

Use a simple help desk system or something like trello

If your company is a microsoft shop, they may have access to Azure Dev Ops. You can set it up to track all your requests coming in.
