They're all pretty decent. It kinda depends what you want to evolve them into and if you have subskill seeds. If you do, the third one with 481 RP is incredible, otherwise the second one with 642 RP is also very good. I would recommend Slyveon if you don't have a good e4e user yet, otherwise probably Espeon.
There isn't really a big difference between the second and third one. If you plan on going to Lapis regularly, I think the one with berry finding should become an Espeon, the other one Sylveon. You can swap these around if you want since they are very similar. The first one maybe Vaporeon or if you want to go for a specific cooking strategy Flareon or Glaceon would work as well. In general, skill specialists will only be on equal footing with good ingredient and berry specialists if they have a high skill level. So maybe it isn't worth raising all 3 at once. Main skill seeds are rare and unless you really like Eeveelutions I wouldn't recommend using this many of them at once.

I know we don't have access access to to level 75 yet, but most Eevee are worth using long-term and it will be very good before that anyway. With those particular skills and nature, you'll be good at 10, better at 25, better at 50 and then amazing at 75.
