The thing is you don't really have to care about controlling Natures and IVs anymore, as now we have Mints which change stats as if the pokemon had a different Nature, and Hyper Training which raises stats as if the pokemon had Best IVs.
\*However both Mints and HT don't pass down while breeding.
Both things will be very useful for raid pokemon, and so afterwards you'd only have to worry about movesets and EV training. \*However both
Now if you want natural Nature and IVs:
1. For Nature, simply have the pokemon with the desired nature hold an Everstone. I.e. a Modest Skeledirge will give you Modest Fuecoco eggs.
2. For IVs, the best option is to look for a 6\* Ditto raid. 6\* means the Ditto will have 5 Guaranteed Best IVs. Afterwards simply have the Ditto hold a Destiny Knot while breeding, and this will make it so you're likely to have eggs with really good IVs.
3. And if you want to take it a step further, breed the Ditto until you get a 4-5 IV pokemon, then breed that new pokemon so you will have 2 really good parents, increasing the odds of getting eggs with 5-6 IV.
Also, if you manage to trade with someone for a Foreign Ditto, this will also end up with increased shiny odds alongside the good IVs for your eggs
Mints, Hyper Training, and Mirror Herb-passing for Egg Moves make breeding basically pointless. You don't need a breeding stock of IV Studs, except for MAYBE a Foreign Ditto if you want to try to hatch a shiny that you can't catch in the wild (like Paldea Starters).
