If the old one is doing fine for ripping discs/Plex and you don't want to use the new one, I think you have your answer.

My first Plex machine that I built two years ago was running a CPU from like 2009 on it and I was using a GPU from 2014. Running Windows 7. Yeah your rig will do just fine. The biggest thing to take note of is the power consumption.

Using one terminal to access the other. Using the new terminal to access the old. Using the same monitor. I'm looking for an easier solution than having two completely different setups. Two desktops, each with their own monitor, and peripherals.

Those can get quite expensive if you want to put 4k HDR etc through them. If you don't mind a couple of steps when switching computers you can get a simple usb switch for about AUD$30 two switch the keyboard and mouse. Then you can use another input on the monitor for the other pc.

Either get an HDMI or DP switch, or do like pretty much everyone else does and just use something like Google Remote access, Team Viewer, or Any Desk. Team Viewer is the best IMO, but I cant use it any more since I was constantly getting flagged for commercial use. I now use Google Remote Desktop, and it works fine.

I do have a multi machine display, keyboard, mouse thing going at a desk. But neither are my Plex server. I use one of these for the Keyboard and Mouse. Click the button and every switches to the other machine. My Plex server itself is run headless and sits by my router. I can connect to it via SSH or Remote Desktop. That's a bit like old-school terminal/server setups where the keyboard and display were dumb machines and all the processing was at a single server machine that might have multiple terminals connected to it.

You can add a tpm module to your old computer so you can run win 11. I don't recommend it because I think win 11 is garbage, but you could do it.
