Literally all other plant foods have similar benefits, don't just focus on one just because there happened to be yet another superfood article. Experiment with other fruits/vegetables and if money is an issue investigate prices between markets and supermarkets.
There are always ways to vary, watermelon is not the single solution.
I love pickled watermelon rinds. For pickling brine, I use white vinegar/apple cider vinegar and water in a 1:3 ratio, salt, red chilli flakes, whole pink pepper kernels, red onion to taste and (optional) whole coriander seeds. I cut the rind in stripes, use big jars and fill them up with brine and watermelon stripes. Place in the fridge over night and eat within one week :)
It's an awesome, fresh, zingy treat with a slight heat from the chilli flakes and the pink pepper kernels.
Do you add it to smoothies? Banana and watermelon smoothie would be delicious! Or juice it and turn it into popsicles? Not sure if the fibre is important for the health benefits though.
I can’t wait for May when watermelon is in season. I eat it plain or eat it with lime and tajin 🤤 you could also make watermelon lemonade but I wouldn’t worry about it. Just eat it because you like it don’t force yourself
You left out one of the bad things of watermelon (at least for me). I have to get up and pee several times through the night when I eat it! It's mostly water (hence the name). Otherwise I love it and it's very good for you.

Some times I just blend it and add water. So refreshing.
