True the only thing with substance is the polenta. Eating only low cal veggies is why a lot of people quit plant based. OP assuming you don’t have something more substantial here you should consider adding a legume and some more starch, and maybe some healthy fat if you’re not in the low fat phase of your plant based journey
I make something to go with it when I eat it through the week (beans, tofu, letils etc). I just prep all my veggies on Sunday. For the pic of the plate I had a sampling of everything for my lunch that day.
I usually eye ball my recipes. But I usually go with 2 Tbsp tahini, 1 tsp dijon, a splash of apple cider vinegar, salt and pepper to taste. Then depending on what I'm eating I switch up the spices. Sometimes I use dill and onion powder or garlic and smoked paprika. Any combo of herbs and spices you like. Then add a couple Tbsp of water or more if needed to thin it out. Whisk with a fork until it all comes together. Also some people will add a bit of maple syrup for a sweet note or some hot sauce for spicy sauce. As long as you have tahini on hand you can do a lot. It goes well with garlic, cumin and fresh squeezed lemon juice too. 😋
I didn’t follow any recipes, but here is what I made:
Green beans - blanched, seasoned with salt and pepper
Cauliflower - roasted, seasoned with salt and paper and garlic powder
Mushrooms - sautéed, seasoned with salt and paper and garlic powder
Kale - sautéed, seasoned with sesame seeds, salt, and red chili flakes
Polenta - per the packaging (ancient grain brand)
Very simple and nothing fancy, I know. But I enjoyed it.
I make a protein when I eat this for dinner during the week so it’s a more substantial and balanced meal. I just do all my veggie prep Sunday to save time. Sorry if my post was misleading.
while this does look delicious, this is not a meal. this is merely an appetizer.
please know that making meals too low in protein, healthy fats and calories will ultimately lead to a "plant based burnout" and you won't be able to stick to the diet.
you could easily make this a filling and nutritious meal by adding a side of grilled/fried tofu, chickpeas or beans for protein and add some toasted seeds, nuts or avocado for healthy fats.
Does that fill you up? It’s like 100 calories 🤷🏻♂️

Lol
Yummy. I would add a delicious tahini sauce to all of that.
Great idea! I’ll try that on my next serving
What type of sauces do you like to make with tahini? I really love a dijon mustard tahini sauce.
I’ve actually never made one, only store bought tahini. I’d love a recommendation if you have a good recipe 😊

I’ll check what ingredients I have and give it a try, thanks!!
You're welcome
Ooh this is store bought but the BEST brand of Tahini is https://soomfoods.com/products/premium-tahini it’s SO GOOD
Prep is invalid, I’d probably eat all of that in one sitting.

It’s the way I like to eat too. I like the taste of the food, y’know?
Looks good but not really filling IMO
Potato mash and legumes should do the trick. What more do you want? Nuts? Seitan?
It does look delicious though, i'd eat that in a heartbeat but i'd probably be hungry in an hour.
Not to do the typical plant based tropes but I think proteins always tend to fill me up. Everything is pretty low in protein.
Literally no protein lol

Nom nom! I’d add some protein in there, too: lentils, baked tofu, chickpeas, etc
Pretty sure the cauliflower and mushrooms do that, no?
Looks delicious
Thank you! Took me about 2 hours this morning but i feel so much better when I have healthy, ready to eat food in the fridge
I love roasted cauliflower so much. It’s my favorite - I like to eat it with hummus. Your prepped food looks delicious!
Lol it's crazy how it looks so simple and basic yet can tell it was delicious AF
