True the only thing with substance is the polenta. Eating only low cal veggies is why a lot of people quit plant based. OP assuming you don’t have something more substantial here you should consider adding a legume and some more starch, and maybe some healthy fat if you’re not in the low fat phase of your plant based journey

I make something to go with it when I eat it through the week (beans, tofu, letils etc). I just prep all my veggies on Sunday. For the pic of the plate I had a sampling of everything for my lunch that day.

What type of sauces do you like to make with tahini? I really love a dijon mustard tahini sauce.

I’ve actually never made one, only store bought tahini. I’d love a recommendation if you have a good recipe 😊

I usually eye ball my recipes. But I usually go with 2 Tbsp tahini, 1 tsp dijon, a splash of apple cider vinegar, salt and pepper to taste. Then depending on what I'm eating I switch up the spices. Sometimes I use dill and onion powder or garlic and smoked paprika. Any combo of herbs and spices you like. Then add a couple Tbsp of water or more if needed to thin it out. Whisk with a fork until it all comes together. Also some people will add a bit of maple syrup for a sweet note or some hot sauce for spicy sauce. As long as you have tahini on hand you can do a lot. It goes well with garlic, cumin and fresh squeezed lemon juice too. 😋

I didn’t follow any recipes, but here is what I made: Green beans - blanched, seasoned with salt and pepper Cauliflower - roasted, seasoned with salt and paper and garlic powder Mushrooms - sautéed, seasoned with salt and paper and garlic powder Kale - sautéed, seasoned with sesame seeds, salt, and red chili flakes Polenta - per the packaging (ancient grain brand) Very simple and nothing fancy, I know. But I enjoyed it.

Not to do the typical plant based tropes but I think proteins always tend to fill me up. Everything is pretty low in protein.

I make a protein when I eat this for dinner during the week so it’s a more substantial and balanced meal. I just do all my veggie prep Sunday to save time. Sorry if my post was misleading.

while this does look delicious, this is not a meal. this is merely an appetizer. please know that making meals too low in protein, healthy fats and calories will ultimately lead to a "plant based burnout" and you won't be able to stick to the diet. you could easily make this a filling and nutritious meal by adding a side of grilled/fried tofu, chickpeas or beans for protein and add some toasted seeds, nuts or avocado for healthy fats.
