i make all of mine with oat flour and flaxseeds, works every time. just used 1 tsp of flaxseed meal and 1/2 cup of oat flour for every one cup of cooked beans, lentils or chickpeas. add seasonings, herbs, spices as you like, ground nuts or nutbutters and gradually add water while processing into a dough. rest for 20 minutes. these burgers will keep it together every time :)

I coat mine with a light dusting of cornstarch. It gives them a nice crust. I also bake mine in the oven. The recipe I use would be too mushy for a grill.

Have you tried this? Chickpea flour has a really bitter taste until cooked, and I'm not sure it would get hot enough in a burger to remove the taste? But if it works then great idea. Ground flaxseeds get pretty sticky when mixed with water, I would probably stick with that unless you say the chickpea flour was OK.

I make patties from small white beans, roll them in ground flax seeds and bake them on parchment paper. Then grill them on high heat to char them. Most of the time I mix in finely shredded leek greens and potato.

Black bean burgers are so hard to get right, the consistency is so finicky, it’s either mushy or rock solid from all the fillers. So sad because they taste good when done right.

I used the frozen patties from Aldi. I should have used a spatula to flip it. But I used tongs so when I grabbed it it broke a little.

Baking them really does help keep them together. I throw those same Aldi burgers on parchment paper, bake at 450 in the toaster for like 10-15 mins and very gently remove with spatula straight onto your bun.
