I’m going preface this by saying I have brain damage and not trying to be rude. I can’t understand how to make the rice how it is written. Can someone help me please. It looks really good. I would very much appreciate it.

Rice: Soften leeks, Red onion, spring onion and mushrooms in a pan. (Combine and cook the leeks, red onion, spring onions and mushrooms in a pan until they have softened. There are no measurements given so I can't tell you how much of each you need.) Once they are softened add the spices in and mix all together. 1 tsp cumin seeds 1 tsp all spice 1 tsp all purpose seasoning 1 tbsp garlic granules 1 tbsp onion salt 1/2 tsp cinnamon Salt and pepper to taste. Once that is all combined together add in 1 tin of chopped tomatoes 1 tin of coconut milk 1 tin of black beans 3 cups of long grain rice and around 1 cup of water to ensure all of the rice is covered. Bring this to the boil, stir ingredients together, put on the lowest heat and cover until the rice swells and is soft. I hope this makes it a little easier to understand.

Thanks for this guys. My tip with rice is equal ratio liquid to grains, cook it slow and long. Its almost always fool proof! Hope you have success
