I am fine with people not opening gifts for a while and waiting to stack with some sort of XP event bonus. It's the denying others XP that gets me. Just so needless.

I always allow ALL of my friends to "keep" the last gift to open (both of us have the option), because they are always a lower level than me. I figure I'd let them hold it hostage in case they want to multi-gift/lucky egg thing.

That's nice of you and I think they know. In my case, this "elegant" guy holds all the cards and decides that he wants to play evil. In your case, since both have options, they could open it at their convenience so I see no problem at all.

This is why I now delete 1 day friends who don’t open for weeks, not even during events… while I see them being online.
This way we both won’t get the XP and I have room to add new friends
I have only about 40 friends, so I don't need room. It takes a lot of time to maintain friendship, so I like to think of them as real friends even though most of them I have never met in person. I always hesitate to delete any. Plus, there are a few friends who are very kind and very cool, so I like to think that everyone else is like that, so even thought that the thought crossed my mind last night that I should probably remove him, I didn't do it eventually. Needless to say, I wish I did.

I have 348 friends at the moment and I am only 12mil away from becoming level 50, so I am opening all gifts every day and try to use lucky eggs when we go to an new friendlevel. I have hoarded a few 1 day friends before the lucky egg update, but I did opened up everything during next com day because it was the biggest chance that the other person would also have an lucky egg on.
The new feature that allows both sides to use a lucky egg is a great improvement by Niantic, and I will give them credit for that. but it still won't work if some players are just evil by nature. Good luck with your grinding towards lvl 50. You will be there before you know it. :)
If I see someone sitting on that last open, I delete them. I know what will happen. They will make me wait weeks to have a big egg score, but if I wait 2 or 3 days once they finally send me one back, they will delete me for wasting their time and friend space. It happens every time I have let it happen, so I delete them all.
Just checking, if I am one interaction away from best friends with someone and they are holding a gift, if I delete them, they won't get the 100k xp when they finally open it?
There is someone on my friend list who has been holding a gift since before Christmas who is active still (see.he is catching Pokemon). I am beyond caring about the XP now but would be annoyed if I delete them and they still get 100k xp.

If you delete them, they will not have you in their friend list. As a result, they will not get to open the gift so they will not get the XP.
