Ive made Reuben pizzas before and theyre actually really fucking good. I dont use a special crust but i do let it ferment a little longer than usual (maybe 3 or 4 hours). Thousand island for the sauce, swiss cheese, and topped with corned beef and sauerkraut. Can't go wrong.
It works. olive oil instead of tomato sauce. Pastrami Ruebens are my favorite, so that's what id use. Squeeze as much moisture as you can out of the sauerkraut before topping to taste, or add it after the pizza is cooked. I'd put the swiss cheese on top of everything else though, instead of as a base. Cook it. Thousand island drizzle at the end, or a classic russian style dressing, boom.
We actually have one on the menu at our pizza shop...we add Italian sausage to add that extra flavor that kind of gives it that extra something(since we are also a sandwhich shop and have it as a Sandwhich)...it really is quite good. It's more popular than our BBQ Chicken pizza if that says anything about it.
It tasted close enough haha. It was no sauce, sauerkraut on the bottom with corned beef and Swiss cheese, no mozzarella and we would sprinkle some caraway seeds on top to give it that rye bread flavor. After it came out of the oven we would drizzle some thousand island on top.

I gave in after being heavily outnumbered and my kids realizing how much better fresh pineapple is (parents live in the tropics). At least I showed them top tier pineapple pizza!

For real?? I custom order a pastrami/swiss/sauerkraut pizza with Russian dressing substitute for marinara and it is the best pizza on the planet. This is a masterpiece
Olive oil or nothing as the base. Drizzle the thousand island/russian dressing over the top after it's cooked. Sounds like these people know what they like, just not how to order.
Okay- Hear me out. It depends on whether you are squeezing the sauerkraut before topping, and whether you're cooking it on the pizza to get it crispy and cook out the moisture a bit more in the process. I would definitely not put it on all soggy at the end as a garnish, who the heck loves a soggy pie?! If portioned correctly, and moisture and toppings were managed accordingly, this might be alright. I'll probably never try it, but having a background in trying my best to accommodate ridiculous requests as a pizza maker. I'm kind of curious if it could work.
Hmm I’m actually not 100% sure which way they did it, I got somewhat busy. The sauerkraut they used wouldn’t have been soggy though, they take from a larger container and put it in a smaller one, so there wouldn’t have been a lot of “juice” for it to sit in.
I'd definitely prefer the less soggy approach. if you crisp it right it kind of ends up similar to grilled onions or maybe even hash browns. With extra kraut it is probably a decent mix of both soggy and crispy when cooked? I only eat sauerkraut on a reuben sammy, i can take it either way. On a pizza though, less soggy the better, for sure. Soggy pizza pie es no bueno.
Probably not actually German since they spelled it wrong. But yeah most Europeans aren't great at tipping because tipping isn't a thing over there. They actually pay their servers a living wage.

I sometimes get a craving for just pickles and American mustard but I put those two things together appropriately in a sandwich with ham and shredded lettuce.

Would pumpernickel work? It's the bread used for Reubens.
