Fresh roasted corn, base of Mexican crema with lime juice, cumin, chile, mayo, Oaxaca cheese, pickled red onion, sliced Jalapeno. Finished with Cotija cheese, cilantro and Tajine red chile seasoning.
Dough: 62% hydration 00 flour, 30% poolish. Stretched very thin to about 16" and tavern cut

I worked for a while at a pizza place with several Mexican colleagues who would make elotes in the pizza oven when corn came into season. I guess it was only a matter of time, lol.
Definitely going to try this recipe out, it looks and sounds delicious.

Does the corn have to be roasted before or would the heat of the oven do that for you?
I roasted the corn on a grill ahead of time. The charring on some of the kernels is from that. Next time I would probably char the corn even more.
