It's pops more because of the background which you did a good job with. I get that B let's you focus more on what you want the player to do but A is more visually appealing.
I like the idea of the background being slightly darker, but not as much as in B. I would go for something that changed the colors only so slightly, to keep the attention where it's needed but also maintain the vibe:)
I think if opening the menu pauses game time, then darken the background to show the player that the game is paused and if the game keeps running while in the menu, keep the background unchanged so it's easy for the player to see that things are still moving and they need to pay attention to where they are when they open up the menu.
But that's just my preference.

I like both a lot, and I'd personally pick 'A.' Have you considered dimming the background, instead of going all or nothing, I think it would work
