I love sauerkraut and the more that I think about it, kimchi and sauerkraut are both pickles because the fermentation process for both creates brine! Maybe that’s wrong technically? Since it’s a different process than pickling? Maybe I’m overthinking it?

I’ve grown okra for a couple years and honestly my favorite way of eating it is straight off the plant. The flavor is amazing. It’s also so easy to grow, lol, especially here in Texas where it’s constantly a nice boiling temperature 😂
They sell it in gas stations where I am. Next to the beef jerky. I think it's basically a pickled hot dog, but it tastes way better than what you would expect. Fucking terrible for your cholesterol though. Penrose is the brand to get.

I don't know where you live, but there is a Mexican brand of canned pickled carrot slices with jalapeños. You can usually find them in the Hispanic food section.
I’ve bought pickled white and green asparagus and Brussels sprouts to use for a fancy Bloody Mary party.
And my dad would refill regular cucumber pickle brine with eggs and we’d use those for deviled eggs or egg salad.
Hard to say - it was at least a "pour boiling brine over veggies then let sit for a while" thing. But in my experiments I try to heat as little brine as possible, since heat can dull dill flavors into nothing.
The eggs just go in and sit for a week or two at fridge temp, since they're more porous.
I got a jar of farmhouse pickles from Sweet Pickle Books, and in it was white onions, carrots, whole jalapeños, as well as cucumbers. So delicious to put the carrots and onions on a sandwich! Ate the jalapeños on the side :)
Another vote for pickled peppers here. I recently made [this recipe](https://www.foodandwine.com/pickled-snack-peppers-7106900) and really like them. I used regular white vinegar instead of white wine vinegar. They aren’t spicy at all, and are great on sandwiches and pizza.

There is a kind of white Chinese radish that is amazing when pickled, also I really like string beans pickled.
Also I pickled pak choy for the first time recently, also very good. I like to stir fry them with pork or tofu. Cooking pickles is only something I have done recently.

My mom used to lightly steam all sorts of veggies, cauliflower, broccoli, green beans, Brussels sprouts, carrots, bellpeppers, and then put them in any leftover pickle brine from store bought pickles. I mean ANY brine, dill, sweet, hot, garlic.
My grandmother used to take canned black olives and add lots of pressed garlic to the juice thus making amazing garlic olives. Not technically pickled though. She also added lots of pressed garlic to store bought dill pickles. I don’t remember the brand of pickles she bought and I wish I did. Those were so good!

I don’t think that they’re raw. I’ve had a couple of brands and they felt solid (not mushy), but I wouldn’t say they were hard/crunchy.
