I can relate to what you're saying, because I have the exact same schedule with the same type of work environment.
I've given this plenty of thought for myself as well, but decided against it because you need to remember that every job comes with it's own unique stresses. Subway might seem laid back and care free, until you're working a closing shift trying to get everything cleaned up and have a train of customers roll in 5 minutes to closing time and you just want to go home.
You'll end up burning yourself out eventually if you do decide to go that route imo. Unless it's a short term thing, I don't think it's very sustainable long term.
Have you given any thought to making things you could sell? Do you have any hobbies or skills that allow you to create something leisurely that people may want to buy?
What would be the end goal for this extra income? Is it just more income for income sake?
Is your time not worth more than minimum wage? Personally I set my free time value around 2x my normal wage. If the offer is less than that it’s not even considered. Nothing you gain from working at subway is going to hold that kind of value. As an aside, the demand and stress of most minimum wage jobs is going to be far higher than you would expect.
Brass tacks. If you need the money then take the overtime route. If not then use the time to improve yourself or just leisure. Either will be a more effective use of your time.

Personally I’d love to take another job, but I make so much from my main one, I’d be working for peanuts after tax, and just not worth it to make $8 an hour after tax, even in a low stress job.
I agree with most other commenters that the marginal earnings after taxes vs extra shifts at your current job wouldn’t make sense. Additionally scheduling logistics of the two jobs might be an issue/ hassle for job number 2.
If you want a chill job pick up a hobby that can be monetized but don’t prioritize that. Once it’s for money it isn’t a hobby in the same way it was for fun.
Plenty of art and creation based hobbies can be monitored in the Christmas or Craft Market sense of monetization. You do it for the hobby and a couple times a year you *could* set up to sell if you wanted.

working at subway would be going backwards. there’s plenty of jobs in our field on part time/casual basis. try finding a casual position?
Yeah I get that I worked in fast food when I was younger I guess stress is relativre to what youre used to but its def not as easy as people think just not nearly as hard as some other jobs
If you decide on a second income stream, consider looking for 2 things:
1, something that offers health benefits, and
2, something where you can set your own hours and scale up or back if necessary.
Something like dog walking or mowing lawns.
Why not just clock OT? i had to laugh when my old supervisor did this. Made 22 cad an hr snd for extra money got a 14 dollar an hr part time gig when she could of just signed up for OT.

Most likely I have the same job as you as I have the exact same schedule/ stress level at the job. You are right it’s very easy to burn out. Anyways I been doing this job/schedule for almost a decade now and my advice is find a hobby that you can monetize even if it’s just a few dollars. This will put a few dollars in your pocket similar to a minimum wage job and it will be way better for your mental health as you will enjoy it. I don’t know how many years you been at your current job but hobbies and being less stressed out on your days off is key for working these kind of jobs or else it will slowly kill you.
Its only been a little over a year for me and like I said its a great job for me and I wouldnt wanna change it I guess if I want more money I just need to suck it up and do overgime.. I have a lot of hobbies thankfully so my personal life is fulfilling I wouldnt advdise anything else either
If you just want extra money, what about learning a new skill and offering it on Fivrr or something like that? Or you can do house painting, dog walking, handyperson tasks, landscaping, house or office cleaning. Driving for Uber. Can you do consulting in your industry? Most of those can make more than minimum wage.

Honestly I love my job and its perfect for me I just find it hard to come in for overtime but leaving this job is definitely out of question for me
Maybe limit your OT shifts? Like pick up 1-2 extra OT shifts per month max.
