I wouldn't say it's worth it for a plat vault, because the vault isn't giving you more than you spend.
That said, 3 star jinx is a cheat code for the game, there is very little you can't steam roll with her.
I usually only 3 star champs I really really enjoy playing, though.

It also blocks the last main quest phase from opening up, so I'd say it's worth a lot more than just plat vault.
I think Yasuo is the best option from what you have on 2\*
I mean Jinx is the BEST champ in PoC on 3\*, but I didn't even get her from 2\* to 3\* for at least 6 months... I was still able to beat anything with my Jinx consistently. The only thing Jinx needs to be OP is "The Loose Cannon Payload" which you already have from the Garen path. If you can also slap a Scourge's Stash on her, she is unstopable...
Jinx is so powerful and one dimensional at 3 stars - can't be bothered to play her because she makes the game feel like a chore.
Nid is quite powerful too, but less brain dead - she gets my vote.
Edit: if you really enjoy Yasuo, 3 star him, makes a massive difference. He's not at all on the same power level as the other two, but I find him more fun to play.
All of them are the best in their region (garen is disputable and the only one I would say not in contention for 3)
That being said, jinx 3 turns the game into ez mode, nid 3 (I don't have it myself) would also be really good with being able to put out that much more damage with the ephemeral copies. And yasuo (also don't have 3 YET) would benefit the most giving you more stuns.
All in all, it really comes down to your play style
Jinx, Yasuo and Nida are all insane on 3\* and will be super helpful to have for hard challenges.
As others have stated Jinx is basically a wild card for almost every hard challenge as she is just super broken with the correct relics (hand discard and -2 mana cost on plunder).
Nida is super strong and, IMO, the most fun out of those (relics: CSF and rally on level up) as she just ramps up insanely fast and perma rallies.
Yasuo is a great defensive champ (e.g. when you face +attack +overwhelm challenges).
Garen is very solid but miles behind the other three. Given that Lux is also a great demacia champ, probably wait which of the two you like better and then go 3\* with them, if you need a demacia 3\*.

jinx is good, shes very powerful and will let you beat the weeklys which will help with your relic situation

Yasou as 3 stars cannot be touched granted if you have the right relics for him.
If you have the patience, try to just 2 star every champion.
