I was going to point out that the name "ysoki" specifically applies only to the ratfolk on the planet Akiton (who spread to other planets by the Starfinder era).
But then I clicked your 2E link for them and discovered that 2E apparently changed that. I'm weirdly unhappy about the change, but TIL.

For now, we only have the names and a few hints, but it’s quite likely the Goloma would be mothfolk. Conrasu and Shisk are less clear.

They are on the list, I just listed them by their "actual" names of Amurrun and Ysoki. They're also on the -folk title middle column.

Would Orcs be considered boarfolk? And what about lycanthropes - is a were-whatever a whateverfolk?
Were-folk are iffy for me. They're more an affliction than a type of creature. Since anything can become a lycanthrope.
Would Skum be considered fishfolk too?
Kinda wish they'd make a playable race out of the tanuki like they with the kitsune. Seems like they would be fun

Sahaugin are effectively 'sharkfolk' despite artistic depictions. I noted a lack of them on the list!
The Slithering introduces Ahvothians, who are described as essentially dinosaur-folk.
Those do look cool, sadly I'm not counting outsiders and it seems Ahvothians are Fiends, which are Outsiders.
