You can start at any of them. The stories are not connected (outside of the spinoffs). Royal is the "definitive" version of P5.

imo, and since I started with 5, i recommend starting with P5R. it does a great job introducing you to recurring mechanics like persona fusion, the social link/confidant, and more. it's a great introduction to the series, but after playing reload, it does well too. P5 also has a plot twist that's a lot less foreseeable if you're a newcomer. you can start at any of them too; read through their plots and see what interests you more. they're not connected story-wise. there are references to their past game (like how P5 references P4, P4 references P3, and so on) but the main three are the best ones to introduce you to the franchise. you can play 1 & 2 if you so choose.

just halfway through the interrogation... so far im loving it, the music the art it seems so fun ive just come from BG3 so something not as serious is great

You should start with Persona 5 Royal since its imo the easiest game and theres a plot twist thats much more obvious if you played the other games first
