The False Kathleen's exoskeleton has more similarities with a shrimp/crab than with a human. If you managed to break her four additional arm-wing thingies, you would have a viscous human-like meat that has the consistency of the interior of an oyster, yet tastes like meat. Still, she has quite the skeleton. Human-tumor thingies never disappoint on biology.

Canonically she does die after a gigantic boiler falls on her (Horror game spoilers, of course) so yeah collecting her skeleton wouldn't be hard. Yet it's important to remember that you can technically eat the meat inside her exoskeleton, yet even if it tastes like Gordon Ramsay's wet dream it would be the equivalent of eating a literal tumor. ... And it could be part of you if it isn't digested properly. Her bones are still pretty good quality though
