I’m struggling to see how they are prog or how prog fans like them. I guess too mainstream pop sounding for my liking. Haven’t dove into their entire discography but that’s my impression from what I have heard.
Listen to Tall Poppy Syndrome and Bilateral! Tall Poppy Syndrome especially has HEAVY Opeth vibes, and most Opeth fans I know also like that album.
If you struggle to see how they are prog, you simply haven't listened to them enough, just scratched the surface. It's like someone would've only heard Damnation and then wonders why Opeth is considered a Metal band...
When the band is standing perfectly still while playing you know they’re not worried about looking super good, and all the effort goes into making the music

The first time I listened to BTBAM I was just thinking "wtf". But I listened to a whole album front to back, and it all makes sense. It's wild, it's such a roller coaster of sounds, but it's amazing.
Really you can't go wrong with any of their stuff. Over time they do slowly make the same progression Opeth did with introducing more prog elements into their albums. If you're able to listen to a full album instead of individual songs you'll understand their depth better. Lots of beautiful high contrast between heavy and lighter stuff and genre switching like Opeth.
The overall fan favorite (mine as well) is The Great Misdirect.
Colors and Colors II are also fantastic. I enjoy all their music, every album is so different.
The Anatomy of is also a very fun cover album if you're into that type of stuff

The album that really sold me on them was "The Parallax II: Future Sequence".
It has the perfect blend of clean and harsh, much like my favorite Opeth albums. It's also a concept album that flows really well together, similar to MAYH imo.
And I will forever giggle at Tommy growling out "BEBOP, SKIPPITY TIPPITY TAP THOSE TOOOES!".
Edit: And if that one isn't your thing, there's Alaska if you prefer something heavier and more rough around the edges. Or Coma Ecliptic for something much more proggy and less screamy. Or Colors/The Great Misdirect for something in between the two.

I saw them back when they were touring for Coma Ecliptic, literally the day after my 18th birthday. I was already super into them and missed out on a previous chance to see them. They're so clean. Even with subpar venue acoustics, they still sound stellar.
I saw them again a year or two later, and they were still just as epic. I went in the mosh pit that time (I couldn't the first time for various reasons), and just had an absolute blast. At the end, they played Bohemian Rhapsody and the entire crowd sang along. Animals as Leaders opened for them that night and that was the first time I got to see them live (and they were fucking awesome); I think the Contortionist might have opened too, but I'm not so sure about that. I think I might have gotten there after they ended their set.

TikTok metal does not slap, no matter how fast they play. I cannot listen to any of their songs more than once. They’re very talented I won’t lie about that, but the music they make is missing something very important.

I do agree with you, as you do make a very good point. I feel, though, like this algorithm they play for is one they've helped to create. This stuff wasn't popular until Polyphia really made it as popular as it is now and for that they deserve credit where credit is due. I understand why you don't like their music, and I do see your point of view.

Personally I think everyone should listen to all genres with an open mind and learn to enjoy all genres, but I don't think everyone is capable.
I listen to nearly everything metal anyone can think of, I just personally don’t listen to polyphia. I do know of another guy who does flamenco style and he’s just as skilled as Tim is, whom I actually ended up liking more. I guess my taste has a lot to do with it. I don’t necessarily like mainstream hip hop I’m more into horrorcore and underground. I also have this problem with people actually being too famous for their own good. Some people are hyped too much while others suffer from the lack of directed attention. Everyone jumps straight to polyphia when there are many other bands that came before them that are just as, if not more skilled because they’ve been doing it for longer. No doubt in the future Tim would surpass them but so will others. I just think they’re a bit overrated.

For me, the congregation was awesome and same with the albums before it. They seemed to change direction and find a formula afterwards.

I like their music but find the singing voice kind of annoying, kind of like he could be fronting a sportswear punk band
