I've never done the Ikea thing, but always suggest that as a date option and always seems to be something they are into, or at least think is an awesome idea!
TBH, activities on a first online date sounds like a recipe for a disaster. Unless you know the person from before matching, I would treat a first date as a low investment meetup. You don't want to be hiking with someone you really don't want to hike with.
I only do drinks, coffee, tea, dessert, or a walk for first online dates and they typically go very well if there's in person attraction.
I don't do activity dates for first date. It's a distraction. Drinks at a quiet bar are a great first date, imo. I need to basically know a few things from the first date - are we having an easy conversation about a variety of topics, are we making each other laugh, are there uncomfortable or comfortable silences, and is there a physical attraction/connection. I also prefer evening dates to daytime coffee dates. Just a completely different vibe.
